1-Sizzling Pakora

Ingredients:
- 1 cup of all-purpose flour
- 1 teaspoon of turmeric
- 2 teaspoons of garam masala
- 12 teaspoons of cayenne pepper
- 1 teaspoon of baking powder
- Salt and pepper, to taste
- 1 large onion, chopped
- 1 cup of chopped spinach
- 2 potatoes, peeled and cut into cubes
- 1 cup of water
- Vegetable oil, for frying
Instructions:
- In a medium-sized bowl, whisk together the all-purpose flour, turmeric, garam masala, cayenne pepper, baking powder, salt, and pepper.
- Add in the chopped onion, spinach, and potatoes, and mix together until all the vegetables are coated with the spices.
- Slowly add the water to the bowl and mix until the batter becomes thick.
- In a large skillet, heat a few tablespoons of vegetable oil over medium-high heat.
- Drop spoonfuls of the batter into the skillet and flatten slightly.
- Cook the pakoras for 4-5 minutes on each side, until golden brown and crispy.
- Remove from heat and serve sizzling hot with your favourite dip or chutney!
2-Karachi Baryani

Ingredients:
- 1 lb. Basmati Rice
- -2 cups chicken, cubed
- 1 large onion, chopped
- 1 red pepper, chopped
- 1 green pepper, chopped
- -3 cloves garlic, minced
- -2 teaspoons ginger, grated
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1 teaspoon chilli powder
- 1/2 teaspoon garam masala
- 3 tablespoons of vegetable oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup plain yogurt
- 1/2 cup cilantro, chopped
- 1/4 cup mint, chopped
- 2 tablespoons lime juice
Instructions:
- Rinse and soak Basmati rice for 15 minutes, and then drain.
- Heat oil in a pot or pan and add the onion, red and green peppers, garlic, ginger, cumin, coriander, and chilli powder. Fry for 2–3 minutes on medium heat.
- Add chicken cubes and fry until the chicken is cooked.
- Add salt, black pepper, and garam masala; stir for 1 minute.
- Add yoghurt, cilantro, and mint and mix.
- Add the basmati rice and mix it with the chicken and spice mixture.
- Add 3 cups of water and bring to a boil.
- Reduce the heat to low and cover with a lid. Cook until the rice is done and all the water is absorbed.
- Once the rice is cooked, turn off the heat and add the lime juice.
- Fluff up the rice with a fork and serve hot with some raita or any side dish of your choice. Enjoy!
3-Chicken Nuggets

Ingredients:
- 1 pound boneless chicken, cut into 1-inch cubes
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 eggs, beaten
- 1/4 cup milk
- 1 cup dry breadcrumbs
- 1/2 cup vegetable oil, for frying
- 1 small onion, chopped
Instructions:
- Place the chicken cubes in a shallow dish.
- In a separate bowl, combine the flour, salt, and pepper and stir until blended.
- In another bowl, whisk together the eggs and milk.
- Dip each chicken cube into the flour mixture, then the egg mixture, then coat with breadcrumbs.
- Heat the oil in a large skillet over medium-high heat.
- Once the oil is hot, add the chicken cubes to the skillet and cook until golden brown and crispy, about 4-5 minutes per side.
- Remove the chicken nuggets from the skillet and let cool on a plate lined with paper towels.
- Serve warm and enjoy!
4-Chicken Spring Rolls

Ingredients:
For this delicious recipe, you’ll need the following ingredients:
- 2 cups cooked chicken
- 1/2 cup cooked long grain rice
- 2 green onions, finely chopped
- 2 tablespoons sesame oil
- 1 tablespoon soy sauce
- 1 teaspoon freshly grated ginger
- 8 sheets of round spring roll wrappers
- Vegetable oil, for frying
Instructions:
- Begin by heating a pan over medium heat and adding the sesame oil. Add the chicken and green onions and cook for 4-5 minutes, until the chicken is lightly browned.
- Once the chicken is browned, add the cooked long grain rice and season with soy sauce and freshly grated ginger.
- Stir to combine all the ingredients, then remove from the heat and set aside to cool.
- To assemble the spring rolls, take a sheet of spring roll wrapper and place 1 tablespoon of the filling in the middle.
- Bring the corners together and seal with water, then continue to roll until all the edges are secure.
- To fry the spring rolls, heat a shallow pan of vegetable oil over medium heat. When the oil is hot, carefully add the spring rolls and cook for about 1–2 minutes, until golden brown.
- Serve your delicious chicken spring rolls warm, with a dipping sauce of your choice. Enjoy!
5-Paneer Bhurji:

Ingredients:
- 1 cup paneer cubes
- 2 cloves of garlic, minced
- 2 tablespoons oil
- 1 teaspoon garam masala
- 1 teaspoon cumin
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- Salt, to taste
- 2 tomatoes, chopped
- 2 tablespoons fresh cilantro leaves
- 1/4 cup green peas (optional)
Instructions:
- Heat the oil in a large pan over medium heat.
- Add the chopped onions and minced garlic, and sauté for a few minutes until the onions are golden brown. .
- Add the garam masala, cumin, turmeric, and red chilli powder. Cook for a minute or two.
- Add the paneer cubes and salt, and stir to combine. Cook for a few minutes until the paneer cubes are lightly browned.
- Add the chopped tomatoes and cilantro, and cook for a few minutes until the tomatoes have softened.
- Add the green peas (optional) and cook for a few minutes until everything is combined and the vegetables are tender.
- Serve the paneer bhurji with chapati or paratha, or even with steamed rice. Enjoy!
