1-Sizzling Pakora

Ingredients:

  • 1 cup of all-purpose flour
  • 1 teaspoon of turmeric
  • 2 teaspoons of garam masala
  • 12 teaspoons of cayenne pepper
  • 1 teaspoon of baking powder
  • Salt and pepper, to taste
  • 1 large onion, chopped
  • 1 cup of chopped spinach
  • 2 potatoes, peeled and cut into cubes
  • 1 cup of water
  • Vegetable oil, for frying

Instructions:

  1. In a medium-sized bowl, whisk together the all-purpose flour, turmeric, garam masala, cayenne pepper, baking powder, salt, and pepper.
  2. Add in the chopped onion, spinach, and potatoes, and mix together until all the vegetables are coated with the spices.
  3. Slowly add the water to the bowl and mix until the batter becomes thick.
  4. In a large skillet, heat a few tablespoons of vegetable oil over medium-high heat.
  5. Drop spoonfuls of the batter into the skillet and flatten slightly.
  6. Cook the pakoras for 4-5 minutes on each side, until golden brown and crispy.
  7. Remove from heat and serve sizzling hot with your favourite dip or chutney!

2-Karachi Baryani


Ingredients:

  • 1 lb. Basmati Rice
  • -2 cups chicken, cubed
  • 1 large onion, chopped
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • -3 cloves garlic, minced
  • -2 teaspoons ginger, grated
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1 teaspoon chilli powder
  • 1/2 teaspoon garam masala
  • 3 tablespoons of vegetable oil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup plain yogurt
  • 1/2 cup cilantro, chopped
  • 1/4 cup mint, chopped
  • 2 tablespoons lime juice

Instructions:

  1. Rinse and soak Basmati rice for 15 minutes, and then drain.
  2. Heat oil in a pot or pan and add the onion, red and green peppers, garlic, ginger, cumin, coriander, and chilli powder. Fry for 2–3 minutes on medium heat.
  3. Add chicken cubes and fry until the chicken is cooked.
  4. Add salt, black pepper, and garam masala; stir for 1 minute.
  5. Add yoghurt, cilantro, and mint and mix.
  6. Add the basmati rice and mix it with the chicken and spice mixture.
  7. Add 3 cups of water and bring to a boil.
  8. Reduce the heat to low and cover with a lid. Cook until the rice is done and all the water is absorbed.
  9. Once the rice is cooked, turn off the heat and add the lime juice.
  10. Fluff up the rice with a fork and serve hot with some raita or any side dish of your choice. Enjoy!

3-Chicken Nuggets

Ingredients:

  • 1 pound boneless chicken, cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 eggs, beaten
  • 1/4 cup milk
  • 1 cup dry breadcrumbs
  • 1/2 cup vegetable oil, for frying
  • 1 small onion, chopped

Instructions:

  1. Place the chicken cubes in a shallow dish.
  2. In a separate bowl, combine the flour, salt, and pepper and stir until blended.
  3. In another bowl, whisk together the eggs and milk.
  4. Dip each chicken cube into the flour mixture, then the egg mixture, then coat with breadcrumbs.

4-Chicken Spring Rolls

  • 1/2 cup cooked long grain rice

  • 2 tablespoons oil

  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • Salt, to taste
  • 2 tomatoes, chopped
  • 2 tablespoons fresh cilantro leaves
  • 1/4 cup green peas (optional)

Instructions:

  1. Heat the oil in a large pan over medium heat.
  2. Add the chopped onions and minced garlic, and sauté for a few minutes until the onions are golden brown. .
  3. Add the garam masala, cumin, turmeric, and red chilli powder. Cook for a minute or two.
  4. Add the paneer cubes and salt, and stir to combine. Cook for a few minutes until the paneer cubes are lightly browned.
  5. Add the chopped tomatoes and cilantro, and cook for a few minutes until the tomatoes have softened.
  6. Add the green peas (optional) and cook for a few minutes until everything is combined and the vegetables are tender.
  7. Serve the paneer bhurji with chapati or paratha, or even with steamed rice. Enjoy!
